Dorito Casserole Recipe

PREP TIME: 30 MINS | COOK TIME: 10 MINS | TOTAL TIME: 40 MINS | SERVINGS: 8

I am forever obsessed with this Dorito Casserole! This has incredibly delicious layers of ground beef, corn, cheese, and seasoned with savoury taco spices topped with layers of crushed Dorito chips. If you want another addition to your weeknight menu, then you have to give this a try very soon!

INGREDIENTS

½ yellow onion diced

1 lb lean ground beef

1 tsp minced garlic

14.5 oz. can petite diced tomatoes with green chillies NOT drained

12 oz. bag frozen corn

2 c. finely crushed Doritos

1 c. loosely crushed Doritos

1 c. sour cream

3 c. Mexican blend cheese

1 packet taco seasoning

Sliced green onions diced tomatoes, shredded lettuce, avocado, sour cream for garnish (optional)

1 cup black beans – optional

How to make Dorito Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees. Using a nonstick spray, grease a 9 x 13inch dish.

Step 2: After gently crushing the chips, set them aside. I have 2 cups of fine crumbs chips and 1 cup of bread-like crumbs to spread on top.

Step 3: Cook the ground beef and onions in a large skillet. Drain the excess grease when done, then add the garlic to the skillet. Continue to cook for another minute.

Step 4: To the skillet, add the frozen corn along with the taco seasoning, tomatoes with chiles, and two cups of finely crushed chips. You can also add black beans if desired.

Step 5: Take the skillet off the heat, then stir in the sour cream and 2 cups of cheese.

Step 6: Into the prepared casserole, pour the mixture. Place in the preheated oven and bake for about 5 minutes or until cooked through.

Step 7: On top, add 1 cup of cheese and 1 cup of loosely crushed Doritos. Return to the oven and continue baking for additional 5 minutes until the cheese has melted.

Step 8: Serve the casserole immediately. Enjoy!
