Baked Sweet and Sour Chicken

Prep time: 20 mins | Cook time: 1 hr | Total time: 1 hr 20 mins | Yield: 4 servings

I am obsessed with this baked sweet and sour chicken! Pieces of chicken coated in a sticky, delightfully sweet, and sour sauce. This surely is a million better than takeout! Serve this baked sweet and sour chicken over rice for an easy and quick, yet mind-blowing weeknight dinner that your entire family will love! This baked sweet and sour chicken is also great paired with fried rice, Wontons, or even homemade egg rolls.

Ingredients

¼ c. vegetable oil

1 lb boneless, skinless chicken breasts, cut into 1” chunks

½ c. cornstarch

2 large eggs, beaten

Kosher salt and freshly ground black pepper, to taste

SWEET AND SOUR SAUCE:

½ c. apple cider vinegar

¼ c. ketchup

¾ c. sugar

½ tsp garlic powder

1 tbsp soy sauce

How to make Baked Sweet and Sour Chicken

Step 1: Prepare the oven. Preheat it to 325 degrees F. Using a non-stick spray, lightly grease a baking dish.

Step 2: For the sauce, place the sugar, vinegar, ketchup, soy sauce, and garlic powder in a large bowl. Mix well until blended and set aside.

Step 3: In a large bowl, place the chicken and season with salt and pepper. Add the cornstarch and gently toss to coat the chicken.

Step 4: Into the eggs, dip the chicken one piece at a time.

Step 5: In a large saucepan, heat the vegetable oil. Once the oil is hot, add the chicken and cook for about 1 to 2 minutes until golden brown.

Step 6: To a paper towel-lined plate, transfer the seared chicken. Repeat with the rest of the chicken.

Step 7: Into the prepared baking dish, place the chicken and pour the sauce over it. Bake the chicken in the preheated oven for about 55 minutes or until the sauce has thickened, turning the chicken every 15 minutes.

Step 8: Remove from the oven when done and serve the Baked Sweet and Sour Chicken right away. Enjoy!
