Ingredients
1 Egg
400 grams of chopped fruit of choice (can be fresh, frozen, or tinned)
1 tsp of ground cinnamon
½ c. of sugar
⅓ c. of milk
1 tsp of vanilla extract
125 grams of melted butter
1–2 tbsp of extra sugar for sprinkling on top (optional)
2 c. of self-raising flour
How to make Delicious Plum or Apple Cake
Step 1: Using the baking paper, line an 8 x 12-inch or 20 x 30cm rectangular slice tin.
Step 2: Prepare the oven. Preheat it to 350 degrees F or 180 degrees C.
Step 3: In a large mixing bowl, combine the flour, sugar, and cinnamon. Fold in the fruit.
Step 4: To the mixing bowl, add the butter along with the milk, egg, and vanilla. Stir well until blended.
Step 5: Into the prepared tin, pour the mixture and sprinkle with more sugar if desired. Place in the preheated oven and bake for about 30 to 35 minutes or until golden brown and a toothpick inserted in the centre of the cake comes out clean.
Step 6: Remove from the oven when done and let the cake cool in the tin. Take the cake out of the tin and slice. Enjoy!
Notes:
You can use fresh apples, but frozen plums and tinned apples work well, too.
Omit the extra sugar if desired.
Make sure to completely cool the cake in the tin before removing it as it will be less likely to crack.
