Pesto Shrimp with Mushrooms

This dish never fails to satisfy me and my loved ones! The combination of shrimp, pesto, herbs, sauce, and a lot more made this a total comfort food! I am so excited to share this recipe with you today because I know that you are going to love it as well! In just 30 minutes, you can enjoy this spectacular dish! Don’t forget to share this with everyone!

Ingredients:

1/4 tsp red pepper flakes

1/2 c basil pesto

8 oz white mushrooms, sliced

1/4 tsp salt

1 lb. shrimp, peeled, deveined

3 cloves garlic, minced

1/2 c chicken broth

1/4 tsp salt

1 tbsp fresh basil, chopped

1 tbsp olive oil

Directions:

Place a large skillet on the stove and medium-high. Add olive oil and allow it to become hot. Add the shrimp, then cook each side for about 3 minutes or until pinkish. Sprinkle a bit of salt and red pepper flakes on top, then move them to a clean plate.

In the same skillet, add more olive oil and let it sizzle.

Add the mushrooms, then sauté for a few minutes until soft.

Add the garlic, then sauté for about a minute or until aromatic. Sprinkle a bit of salt on top to season.

Put the shrimp back into the skillet together with 1/2 cup of chicken broth and 1/2 cup of basil pesto. Stir everything to mix, then remove the skillet from the heat.

Sprinkle freshly chopped basil on top to garnish.

Serve and enjoy!

Notes:

Place any leftovers in an airtight container, then put them in the fridge. Reheat for a few minutes before serving again.
