I have always loved Thai cuisine. And for this crying tiger recipe, I give the simple grilled steak a fun Thai twist. Serve the sliced steaks with a spicy dipping sauce along with lettuce, leaves, cabbage leaves, cucumber slices, Thai sticky rice, or regular rice. 2 pounds of Sirloin Steak seasoned with salt on both sides
Dipping Sauce:
1 tsp Ground Toasted Rice (or toast 2 tbsp for Sweet Glutinous Rice with Lime Leaves and grind to a fine powder)
⅓ c. Lime Juice about 2 limes
2 tbsp Thai Fish Sauce
1 tsp Coconut Sugar or sub brown sugar or regular sugar
2 tbsp Green Onion Chopped
2 tbsp Cilantro Chopped
1 tbsp Water (taste the sauce first and add water as needed to make it less concentrated)
2 tsp Ground Thai Chili Pepper (use more or less depending on the spice level. Or swap with red pepper flakes or fresh Thai chilis)
Serving Suggestions:
Lettuce leaves, Cabbage leaves, Cucumber Slices, Thai Sticky Rice or regular rice
How to make Crying Tiger
Step 1: To make the dipping sauce, whisk the fish sauce with lime juice, toasted rice powder, Thai pepper, coconut sugar, cilantro, green onion, and water until well combined. Adjust the seasoning according to taste.
Step 2: On the stove, heat a cast iron (or grill) until hot. Before laying the steaks on the grill or skillet, make sure to pat the steaks dry. Cook the steaks for a few minutes per side until your desired doneness.
Step 3: Before slicing the steaks, let them rest for about 10 minutes. Serve the steaks with the dipping sauce along with lettuce, leaves, cabbage leaves, cucumber slices, Thai sticky rice, or regular rice. Enjoy!
