Crustless Spinach Cheese Pie

I started my low-carb journey right after the New year. I promised to take care of myself more. It’s not as easy as it sounds, but determination is the key. Now, I am in my fourth month, and I have been enjoying the journey. If you want to begin your low-carb diet soon, this crustless spinach cheese pie is a way to start. Incredibly easy to make using only pantry ingredients. And you can make this pie in a pie pan or square dish.

I never realized that there are hundreds of keto and low-carb recipes available. Not until I started my diet. I thought I’ll be done in days! Yes, I doubted myself at first, but hey, I think we all did at some point.

If you know spinach mushroom quiche, then you are not new to this spinach dish. This crustless spinach cheese pie is one of my favorite low-carb dishes. So if you cannot wait to get back on track, then start with this delicious low-carb spinach wonder!

Ingredients

5 eggs, beaten

10 oz. frozen spinach, thawed, squeezed, and drained (or use wilted down fresh)

1 tsp dried minced onion

2 ½ c. cheese of any kind (I used a fiesta blend)

salt and pepper to taste

¼ tsp garlic powder

How to make Crustless Spinach Cheese Pie?

Step 1: Ready a 9-inch pie pan. Grease and set aside.

Step 2: Mix the eggs, frozen spinach, dried minced onion, cheese, garlic powder, salt, and pepper until well combined. Then, pour the mixture into the prepared pan.

Step 3: Place in a 375 degrees F oven and bake for approximately 30 minutes or until the edges of the pie begin to brown.

Note:

Easily double this recipe to fit into a 9 x 13-inch pan or make it in a square dish. Feel free to make this in advance for a quick breakfast or snacks.
