These simple Southern Pinto Beans simmer all day in a slow cooker. The result is tender and delicious Pinto beans with creamy juice just like our grandmother used to make. 1 pound dry pinto beans
6 cups water (7 cups if not soaking beans prior)
1 1/2 teaspoons sea salt
1/2 teaspoon pepper (use 1/4 teaspoon if you prefer less spice)
1 tablespoon bacon fat or ham hock or 2 pieces chopped raw bacon
1 bay leaf (optional but recommended if vegetarian)
How to make Crockpot pinto beans
Step 1: Rinse the beans thoroughly. Remove any stones or beans that don’t look good.
Step 2: Add warm water in a pot or bowl to cover the beans by two inches. Soak the beans overnight. If not soaking, simply add another cup in step 4.
Step 3: The following day, drain and add the beans to a slow cooker.
Step 4: Into the slow cooker with the beans, add 6 cups water, salt, pepper, and bacon fat, raw bacon, or ham hock. If vegetarian, add a bay leaf.
Step 5: Set on low and cook for 8 hours. Or 5 hours on high. Cover and cook the beans longer if not yet tender. Cooking time depends on your slow cooker and the age of the beans.
Step 6: Adjust the seasoning according to taste.
Note:
Soaking the beans overnight is recommended but if you don’t have enough time, you just have to cook the beans a bit longer.
