This is a classic Mexican dish made with flavorful pork butt, spices, onion, oranges, and blue moon beer! A simple delicious Crockpot Carnitas recipe excellent for filling tacos, burritos, quesadillas, and more!

4 lb pork butt
1 onion, diced
1 tbsp chipotle chilli powder
2 tsp oregano
2 tsp cumin
1 tsp salt
1 large orange
1 (12ounces) Blue Moon or similar wheat beer
How to make Crockpot Carnitas
Step 1: Slice the pork carefully into 4 even pieces. Place the pieces in a crockpot, then add the onion, chipotle chilli powder, oregano, cumin, and salt on top.
Step 2: On top of the spices, zest the spices and juice the entire orange. Pour the beer slowly on top of everything. Cover and cook for 7 to 8 hours on low or 4 hours on high.
Step 3: Fixed the oven to broil, then when the pork is done place them in a sheet pan.
Step 4: Pull the pork apart and spread it over the entire sheet pan.
Step 5: Add around 1/4 cup of liquid from the crockpot and evenly sprinkle on top of the pulled pork.
Step 6: Place the pan in the middle rack of the oven. Broil for about 5 to 6 minutes or until the pork is nice and the edges are crispy.
Step 7: Serve quickly.
Notes:
For this recipe, use only Chipotle Chili Powder.
Make sure to not skip the broiling step to avoid wet and mushy carnitas.
In place of beer, you can use broth instead.
I suggest using a boneless cut for this dish.
