I love simple recipes like this crockpot salsa chicken. It’s easy and quick to make using just a few simple ingredients. This is also very versatile as I can add any ingredients to suit my taste. For the garnishes, my favourites are rice, cheese, tomatoes, tortillas, and sour cream but feel free to add anything you like.

1/2 jar salsa
2 boneless chicken breasts
1-ounce taco seasoning
1 14-ounces can sweet corn (drained & rinsed)
1 14-ounces can black beans (drained & rinsed)
Optional Garnishes:
Sour Cream
Rice
Tortillas
Cheese
Tomatoes
Lettuce
Avocados
Limes

How to make Crock-Pot Salsa Chicken
Step 1: Into the crock-pot, place the chicken and all the ingredients. Cover and set to cook for 6 to 7 hours on low or 4 to 6 hours on high.
Step 2: Transfer the chicken to a cutting board. Shred, then add it back into the pot. Stir and cook for additional 20 minutes.
Step 3: Once done, serve this salsa chicken over rice or wrapped in a tortilla. This is even good with tortilla chips topped with your preferred garnishes. Enjoy!
