INGREDIENTS
3-5 lbs boneless pork chops (thick cut 1- 1 1/2-inch)
1 tsp minced garlic
1/2 c. light brown sugar, packed
1/4 c. low sodium soy sauce
1/2 c. ketchup
1-3 tbsp red chile paste (for this recipe, I used Gourmet Garden)
1/4 c. cornstarch
1 tsp black pepper
1/2 tsp kosher salt
HOW TO MAKE CROCKPOT PORK CHOPS
Step 1: In a 6-quart slow cooker, add the garlic, light brown sugar, soy sauce, ketchup, red chile paste (if using), black pepper, and kosher salt. Stir well, then add the pork chops. Toss the chops to coat with the sauce before setting to cook for 4 hours on low.
Step 2: In a mason jar, whisk equal amounts of cornstarch and water. Do this after 4 hours of cooking the chops. Put the lid on, seal, and shake the jar to create a slurry. Pour this into the pot and stir. Cover the pot and set to cook for another hour. If needed, cook the pork chops further until tender and cooked through.
NOTES:
Add the amount of chilli paste depending on your preferred heat level. For this recipe, I used 3 tbsp, and it adds just a little heat. Feel free to add less or skip the chilli paste if you don’t like a bit of kick.
The cooking times vary depending on your slow cooker and the thickness of the meat.
