CROCK POT LEMON GARLIC BUTTER CHICKEN THIGHS

This crockpot dish has an outstanding flavour and super easy to throw together. If you are on the search for easy meals to serve to your family, this scrumptious crockpot dinner idea is perfect!

My family’s favourite – Lemon Garlic Butter Chicken Thighs. Found this online a couple of years ago and added this immediately to my family’s favourite rotation list. We enjoy this over steamed rice or if you want to stick to low-carb or keto, this is excellent over cauliflower rice or salad. And this recipe gets easier every time.

INGREDIENTS

6-8 boneless chicken thighs, skinless or with skin

Salt and pepper, to taste

1 tsp garlic powder

1 tsp onion powder

1/2 tsp crushed red chilli pepper flakes, or cayenne (optional)

1/2 tsp paprika

4 garlic cloves, sliced or minced

1 tsp Italian seasoning

1/2 stick butter, diced

Zest of half a lemon

Juice of one lemon

1/3 c. low sodium chicken broth

Chopped fresh parsley and lemon slices, for garnish

HOW TO MAKE CROCKPOT LEMON GARLIC BUTTER CHICKEN THIGHS

Step 1: At the bottom of a slow cooker, add the chicken thighs.

Step 2: In a small bowl, combine 1/3 cup chicken broth, lemon juice, and zest. Then, pour it over the chicken thighs.

Step 3: Place the Italian seasoning, onion powder, garlic powder, paprika, crushed red chili pepper flakes, salt, and pepper in a small bowl. Combine to make the spice mix.

Step 4: Over the chicken thighs, sprinkle the spice mix, then top with the fresh minced garlic and diced butter.

Step 5: Cover the pot, set on high, and cook for 3 to 4 hours or on low for 6 to 8 hours.

Step 6: When done cooking, garnish with some chopped parsley and lemon slices. Enjoy hot with cauliflower rice, spiralized zucchini noodles, rice, pasta, or quinoa.
