Crock Pot Garlic Balsamic Pork Loin

Juicy, melt-in-your-mouth, and packed with flavour Garlic Balsamic Pork Loin Roast is surprisingly easy to make. A no-fuss crockpot dish that your whole family will love and enjoy!

Ingredients

3 lbs pork loin

1 tsp salt

1 tsp paprika

½ tsp onion powder

¼ tsp fresh ground pepper

⅓ c chicken broth

4 tbsp olive oil, divided

3 tbsp balsamic vinegar

5 cloves garlic, smashed

½ tbsp Italian seasoning

How to make Crock Pot Garlic Balsamic Pork Loin

Step 1: With paper towels, pat dries the pork.

Step 2: In a small bowl, place the salt, paprika, onion powder, and black pepper. Mix well, then sprinkle on the entire pork.

Step 3: In a large skillet, heat a tbsp oil over medium heat.

Step 4: Once the oil is hot, sear the pork for a few minutes on both sides until golden brown.

Step 5: Add the rest of the olive oil, balsamic vinegar, and garlic in a blender or food processor. Pulse until mixed and thick.

Step 6: Add in the Italian seasoning. Process for just a few seconds to incorporate.

Step 7: To the insert of the slow cooker, add the chicken broth, then the pork loin in the slow cooker, fat side up.

Step 8: Coat the entire pork loin with the prepared balsamic vinegar.

Step 9: Cover and cook for 4 to 5 hours on low or about 3 hours on high.

Step 10: The pork is done when an instant-read thermometer inserted into the thickest part reads 145 degrees F.

Step 11: Take the meat out of the slow cooker and onto a cutting board. Use foil to cover the pork. Allow resting for at least 15 minutes before slicing.
