Crock Pot Garlic Balsamic Pork Loin

Ingredients

3 lb pork loin

1 tsp salt

1 tsp paprika

½ tsp onion powder

¼ tsp fresh ground pepper

⅓ c. chicken broth

4 tbsp olive oil, divided

3 tbsp balsamic vinegar

5 cloves garlic, smashed

½ tbsp Italian seasoning

How to make Crock Pot Garlic Balsamic Pork Loin

Step 1: Using paper towels, pat dries the pork.

Step 2: In a small bowl, mix the salt with paprika, onion powder, and black pepper until well combined. Sprinkle this on the entire pork.

Step 3: In a large skillet, heat a tbsp olive oil over medium heat. Once the oil is simmering, add the pork to the skillet and sear for a few minutes per side or until golden brown.

Step 4: Pulse the rest of the olive oil, balsamic vinegar, and garlic in a blender or food processor until mixed and the mixture has thickened. Now, add the Italian seasoning and blend for a few seconds until incorporated.

Step 5: To the insert of a slow cooker, pour in the chicken broth. In the slow cooker, put the pork loin fat-side-up. Brush the prepared balsamic mixture using a pastry brush on the entire pork. Put the lid on and set to cook for 4 to 5 hours on low or 3 hours on high.

Step 6: Once a meat thermometer inserted in the thickest part of the meat reached 145 degrees F, the pork is done. Now, take the pork from the slow cooker and place it on a cutting board. Using foil, tent the pork and allow it to rest for at least 15 minutes.

Step 7: Slice the pork loin and serve. Enjoy!
