Crock Pot Bourbon Chicken

PREP TIME: 10 MINS | COOK TIME: 6 HRS | TOTAL TIME: 6 HRS 10 MINS | SERVINGS: 6

This is a savoury meal with tender, juicy chicken cooked in a crazy rich Bourbon ginger sauce. Takes only ten minutes to prep, then set into the crockpot to cook. This packed with flavour bourbon chicken is best to serve over rice with steamed broccoli on the side.

Ingredients

3 pounds boneless skinless chicken thighs

3 tbsp cornstarch

¼ c. sliced green onions (or more to taste)

Sauce:

½ tsp fresh grated ginger

4 cloves garlic, minced

½ tsp crushed red chilli flakes

⅓ c. apple juice

1 ½ tbsp honey

¼ c. brown sugar

¼ c. ketchup

3 tbsp cider vinegar

¼ c. water

¼ c. Bourbon

¼ c. soy sauce

salt & pepper to taste

How to make Crock Pot Bourbon Chicken

Step 1: In a small bowl, combine the sauce ingredients (freshly grated ginger, garlic, red chilli flakes, apple juice, honey, brown sugar, ketchup, cider vinegar, water. Bourbon, soy sauce, and salt & pepper) until well incorporated.

Step 2: In a slow cooker, place the chicken and pour the sauce over. Put the lid on and set to cook for 6 to 7 hours on low or 3 hours on high.

Step 3: When the timer is up, remove the cover, and take the chicken from the slow cooker. Chop the chicken into bite-sized pieces and tent to keep warm.

Step 4: In the meantime, whisk 3 tbsp water with cornstarch to make the slurry.

Step 5: Now, set the slow cooker to high. Stir in the slurry into the sauce. Replace the lid and let the sauce thicken for about 10 minutes, stirring often. Return the chicken to the slow cooker and stir into the sauce. Lastly, add the green onions.

Step 6: When done, serve the bourbon chicken over rice. Enjoy!

Notes:

For best results, use regular soy sauce and not light.

Whisk the slurry in the sauce over medium heat until thickened. Stir this in the slow cooker with the chicken, then green onions.
