24 oz. large raw shrimp, peeled and deveined
Canola oil for frying
Egg Wash:
1 c. buttermilk (or milk)
2 large eggs
1/2 teaspoon black pepper
1/2 teaspoon kosher salt
Batter:
1 c. cornmeal
1 1/2 c. all-purpose flour
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon cayenne pepper
2 teaspoon kosher salt
1/2 teaspoon black pepper
Dipping Sauce:
1/2 c. sweet chilli sauce
3/4 c. mayo
How to make Crispy Fried Shrimp
Step 1: In a large, heavy-bottomed skillet, heat half an inch of oil over medium heat. Using a paper towel, line a large plate and set it aside.
Step 2: Place the eggs and buttermilk in a cake pan or pie plate. Mix well until combined, then add half tsp each of salt and pepper.
Step 3: Combine the flour, cornmeal, salt, pepper, garlic powder, onion powder, and cayenne pepper in another cake pan.
Step 4: To the egg mixture, add the shrimp. Toss to coat. Add the shrimp to the flour a few at a time, making sure each piece is completely coated. On a clean plate, lay the breaded shrimp. Repeat with the rest of the shrimps.
Step 5: To the hot skillet, add the shrimp and fry them for about 3 minutes or until crispy and golden brown. Make sure to not overcrowd the pan.
Step 6: To make the Dipping Sauce, whisk the mayo with sweet chilli sauce in a bowl.
NOTES:
To bread the shrimp with less mess, first, you need to set up your workstation. Grab two pie plates or cake pans. If needed, you can use wide, shallow pie cake or cake pans. Prep the liquid ingredients (egg and buttermilk and place them into the first plate and the dry ingredients in the second plate). Coat the shrimp in the egg mixture using one hand, then using the other dredge the shrimp into the flour mixture.
