Crispy Black Bean Tacos with Avocado-Lime Sauce

Beware these crunchy tacos stuffed with wonderful spiced black beans and melty cheese are freaking addictive! And the Avocado-lime Sauce is a must! These delicious tacos are the perfect easy crunchy vegetarian dinner that your entire family will love.

I cannot wait for you to try these crunchy tacos. One bite and you’ll be hook! This quickly became my favourite go-to quick dinner. It’s incredibly easy and quick to throw together with simple ingredients. The avocado-lime sauce is loaded with fresh flavours, the perfect pair to these rich and crunchy tacos.

Want more? Feel free to dress up your tacos with any of your favourite toppings such as chopped lettuce, diced tomatoes, fresh cilantro, a squeeze of lime, and more shredded cheese. Who would not kill for some extra melty cheese, right?

INGREDIENTS

Avocado-Lime Sauce:

2 avocados

1/2 bunch cilantro thick stems removed

3 limes juiced

1 jalapeno seeded if desired

1/3 c. olive oil

1 tsp taco seasoning

1/2 tsp salt

1 tbsp sugar

2 tbsp water

Crispy Black Bean Tacos:

3 c. Best Ever Mexican Black Beans

3/4 c. Mexican cheese blend

12 corn tortillas

4-6 tbsp vegetable oil divided

How to make Crispy Black Bean Tacos with Avocado-Lime Sauce

Step 1: To make the sauce: In a blender, add all the ingredients and pulse until smooth.

Step 2: To make the Tacos, heat in a skillet 2 to 3 tbsp oil over medium-high heat. Once the oil is hot, add two tortillas to the skillet and heat them for about 10 seconds. With 1/4 cup of beans, cover one side of each tortilla and top with a tbsp Mexican Cheese Blend. Very carefully fold the tortillas in half using a spatula and press down. Continue to cook for another 3 to 4 minutes. Flip the tacos with the same spatula and cook the other side for 3 to 4 minutes more until crispy and brown. Repeat with the rest of the tacos, adding extra oil as the pan dries out.

Step 3: Enjoy immediately.
