CREAMY ZUCCHINI SAUCE

Zucchini is wonderful! It’s pretty flexible, you can make it into anything! One of the best things about zucchini is that it is loaded with beneficial nutrients such as Vitamins C and A, potassium, folate, and fibre. It also helps to lower cholesterol, reduce high blood pressure, and decrease the risk of stroke. Truly, zucchini is a power booster!

I have tons of zucchini recipes I love. and I want to share with everyone, but today I want to brag about this creamy zucchini sauce! It is made with paprika roasted zucchinis, sour cream, garlic, and fresh herbs, and this pairs so well with pasta, over rice, or with a piece of bread.

INGREDIENTS

Zucchini:

3 tablespoons olive oil

2 pounds zucchini cubed

salt and pepper to taste

1 tablespoon paprika

Sauce:

2 garlic cloves minced

1 c. sour cream

1 tablespoon tomato paste

2 tablespoons chopped basil

salt to taste

2 tablespoons chopped dill

HOW TO MAKE CREAMY ZUCCHINI SAUCE

Step 1: Prepare the oven. Preheat it to 400 degrees F.

Step 2: Combine the zucchini, oil, paprika, salt, and pepper until well blended. Onto a large non-stick baking tray, spread the zucchini mixture. Place in the preheated oven and bake for about 20 minutes or until soft and lightly brown.

Step 3: In the meantime, put the sauce ingredients (garlic cloves, sour cream, tomato paste, basil, dill, and salt) in a medium skillet. Stir well and bring everything to a simmer. When done, turn the heat off.

Step 4: To the cream sauce, add the baked zucchini. Mix well until combined. If desired, garnish with some chopped herbs. Enjoy!

NOTE:

Enjoy this zucchini mixed with some cooked pasta such as spaghetti, penne, or linguine. You can also pour a big amount of the sauce over boiled rice. Or serve this with quinoa, farro, bulgur, barley, buckwheat, or any of your favourite grains. I like mine sometimes with some fresh bread.
