This wonderful Creamy Zucchini Sauce is packed with flavour and super amazing to pair up with noodles, over rice, even with your fave grains. Easy and quick to make using paprika roasted zucchinis, sour cream, garlic, and fresh herbs. This sauce is a keeper! And for a quick meal, simply serve this with some fresh bread.
This recipe is super versatile with fresh flavours of zucchini. It’s an incredibly filling vegetarian meal perfect for lunch or dinner. Simply toss the zucchini with the creamy-dreamy sauce, and you are good to go!

INGREDIENTS
Zucchini:
2 pounds zucchini cubed
3 tablespoons olive oil
1 tablespoon paprika
salt and pepper to taste
Sauce:
1 c. sour cream
2 garlic cloves minced
1 tablespoon tomato paste
2 tablespoons chopped dill
2 tablespoons chopped basil
salt to taste
HOW TO MAKE CREAMY ZUCCHINI SAUCE
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Combine the zucchini, oil, paprika, salt, and pepper, Onto a large non-stick baking tray, spread the mixture, and place in the preheated oven to bake for about 20 minutes until tender and slightly brown.
Step 3: In the meantime, put the sauce ingredients (sour cream, garlic cloves, tomato paste, dill, basil, and salt) into a medium skillet. Stir well and bring to a simmer. Turn the heat off.
Step 4: To the cream sauce, add the baked zucchini and mix well. If desired, garnish with some chopped herbs. Serve and enjoy!
NOTE:
To serve, mix this amazing zucchini sauce with some cooked pasta such as spaghetti, penne, or linguine. You can also pour a bountiful amount of the sauce over boiled rice. If you’d like, you can serve this with your fave grain like quinoa, farro, bulgur, barley, buckwheat, etc. Or for a quick meal, serve this with some fresh bread.
