Pasta dinner is a staple at home. One whole week will never be complete without pasta on the dinner table. And one of my family’s favourite and my go-to is this hearty and simple Creamy Tuscan Sausage Pasta. Incredibly easy and quick to make with a few ingredients. If you’d like, you can use spicy Italian pork sausage instead of the Italian chicken sausage. When serving, either follow the recipe as is and toss the pasta with the sauce or serve the pasta and top with the sauce and extra Parmesan. Either way, it’s delicious!

1 pound linguine
1 tablespoon extra-virgin olive oil
1 pound Italian chicken sausage, sliced on the bias
2 cloves garlic, minced
2 cups diced tomatoes
1/2 cup heavy cream
1/2 cup freshly grated Parmesan, plus more for serving
Kosher salt
Freshly ground black pepper
2 cups baby spinach
Fresh torn basil, for garnish
How to make Creamy Tuscan Sausage Pasta
Step 1: Following the package directions, cook the linguine in a large pot of salted boiling water until al dente. Drain when done and set aside.
Step 2: Heat the oil in a large skillet over medium heat. Once the oil is hot, add the sausage and cook for about 2 minutes on each side until seared. Now, add in the garlic and cook for a minute more until aromatic. Then, stir in the tomatoes, cream, and Parmesan. To taste, season with salt and pepper. Bring the mixture to a low boil, then decrease the heat to a medium and continue to cook for another 5 minutes until the sauce has thickened a bit.
Step 3: To the sauce, toss in the cooked pasta and spinach until completely coated and the spinach has wilted.
Step 4: Before serving, garnish with basil. Enjoy immediately with extra Parmesan.
