Creamy Tuscan Chicken Pasta

You will love this restaurant’s quality Creamy Tuscan Chicken Pasta. Easy and quick to make with loads of Mediterranean flavours in the most incredible creamy sauce. Throw this together in under 30 minutes and serve this on your next date night.

INGREDIENTS

Pasta:

1 lb penne or other pasta (454 grams)

1 tbsp butter (.5 ounces, 14 grams)

Chicken and Sauce:

2 tbsp olive or vegetable oil

1 ½ lbs chicken breasts (454 grams)

1 medium onion diced

1 red bell pepper diced

8.5 oz jar (241 grams) sundried tomatoes in oil, drained (yields about 6 ounces, 170 grams)

5 cloves garlic finely minced

1 tsp dried Italian seasoning (or oregano)

¾ c chicken broth (6ounces, 170 grams)

1 ½ c cream or half and a half (12 ounces, 340 grams)

¾ c parmesan cheese (3 ounces, 85 grams)

6 oz bag of baby spinach leaves whole or roughly chopped (170 grams)

Red pepper flakes, salt, and pepper to taste

How to make Creamy Tuscan Chicken Pasta

Pasta:

Step 1: Add the pasta to a large pot of boiling salted water, cook until al dente. When done, drain the pasta and toss with butter.

Chicken and Sauce:

Step 1: Using a kitchen mallet, slightly flatten the chicken breasts to quickly and evenly cook them. Before pounding the chicken, slice the breasts in half horizontally if they are very thick. Then, season with salt and pepper.

Step 2: Heat a tbsp oil in a skillet over medium-high heat.

Step 3: Once hot, add the chicken breasts to the skillet and sear each side until the breast is cooked through and golden brown. When done, take the cooked chicken out of the skillet.

Step 4: Add the rest of the oil into the skillet. Saute the onions until soft.

Step 5: Stir in the red bell pepper and continue to cook until almost tender.

Step 6: Add the garlic, sundried tomatoes, and Italian seasoning to the skillet. Stir and cook for a minute more.

Step 7: Pour in the broth and scrape the bottom of the pan to deglaze.

Step 8: Add in the cream and simmer for about 2 minutes.

Step 9: Add the parmesan and cook until melted.

Step 10: Stir in the baby spinach once the cheese has melted.

Step 11: To taste, season with salt and pepper.

Step 12: Assemble the pasta, chicken, and sauce. Serve and enjoy!
