I love a simple meal that I can make any time. I have my top favourites, and one of them is this creamy spinach chicken. I can easily throw this together in a snap using mostly pantry ingredients. A one-pan wonder with chicken and spinach. You’ll never go wrong with this amazing duo.

Who doesn’t love an easy and delicious dinner that you can make in a snap without a fuss? No need to sear or fry the chicken. All the ingredients are dumped and baked in a single pan. Now, this creamy spinach chicken is dinner-worthy! Not to mention low-carb and keto-friendly, making this perfect for everybody.

I have received rave reviews about this recipe. My entire family just loves every single bite of this scrumptious creamy spinach chicken. While cooking this dish, I prep the pasta. So once this is done baking, I can right away serve a meal for my family to enjoy. This creamy spinach chicken also pairs well with white rice, mashed potatoes, or a simple salad. It is no denying why everyone loves this, it is not only packed with flavours but also amazing for the body.

Ingredients

1 pound chicken breasts thinly sliced

1 c. Monterey Jack cheese grated

8 ounces fresh spinach

Creamy Sauce:

1/2 c. Parmesan cheese grated

1/2 c. mayo

1/2 c. sour cream

1 teaspoon garlic salt

1/2 teaspoon ground black pepper

How to make Creamy Spinach Chicken

Step 1: Prepare the oven. Preheat it to 500 degrees F. Using cooking spray, lightly grease a 13 x 9-inch baking pan.

Step 2: Onto the bottom of the baking dish, pack the fresh spinach, and top with the uncooked chicken breasts.

Step 3: On top, evenly spread the creamy sauce mixture and sprinkle with a cup of grated cheese.

Step 4: Place in the preheated oven and bake for about 18 to 20 minutes or until the spinach has wilted and the chicken is completely cooked.
