You’ll love every inch of this incredibly creamy, rich, and cheesy scalloped potatoes and kielbasa. So good, your family will request this again and again!
Ingredients
1 tablespoon oil
1 – 14 ounces kielbasa – sliced and cut in half
1 medium sweet onion, sliced and cut in half
6 medium potatoes – peeled, washed, and sliced (I used my mandolin to keep thinness consistent – about 1/4”)
2 cups cheddar or favourite shredded cheese
WHITE SAUCE:
3 1/2 tablespoons butter
4 1/2 tablespoons flour
1 1/2 cups chicken broth
1 cup heavy cream
1/2 cup milk
1/4 teaspoon dried thyme
1/2 – 3/4 teaspoon kosher salt
1/2 teaspoon pepper
How to make Creamy Scalloped Potatoes and Kielbasa
Step 1: Heat the oil in a medium skillet over medium-high heat. Once the oil is hot, add the kielbasa and onions to the skillet, stirring often until the sausage begins to caramelized and the onions have softened. Set aside when done.
Step 2: Peel the potatoes, then wash and slice. Make sure to keep the slices of potato in cold water. If desired, you could par-cook the potatoes to cut down the baking time especially if using harder potatoes like Russets.
Sauce:
Step 3: Melt the butter in a medium saucepan. Add the flour to the pan once the butter has melted and whisk for about a minute to make a paste and get rid of the flout taste.
Step 4: Gradually add in the broth, whisking each addition to remove the lumps. Add the cream and milk along with the seasonings, stirring occasionally until the mixture has thickened. Adjust the seasoning according to taste.
Step 5: Ladle enough sauce to cover the bottom of a 4-quart casserole. Place half of the potatoes in a single layer followed by half of the kielbasa and onion mixture, then half of the cheese. Do another layer of sauce, potatoes, kielbasa, ending with cheese.
Step 6: Place the dish in 350 degrees preheated oven and bake for about 45 minutes, covered. Uncover and resume baking for another 40 minutes until the potatoes are easily pierced with a fork.
Step 7: Remove from the oven when done and serve with your preferred veggies on the side or a nice slice of crusty bread. Enjoy!
