Creamy Sausage Tortellini with Spinach, Tomatoes and Mozzarella cheese sauce

Enjoy an Italian-inspired dinner tonight with this easy-to-make Creamy Sausage Tortellini with Spinach, Tomatoes, and Mozzarella Cheese Sauce. A no-fussy dinner meal made with pre-made tortellini smothered in a simple, scrumptious homemade creamy sauce.

I am obsessed with the simplicity of this pasta dish. It is like one of those we enjoy ordering at Italian restaurants. Tastes genuinely good and perfect for everybody even for date nights.

Ingredients

16 ounces Italian pork sausage or regular, fresh, uncooked (I used Jimmy Dean brand)

14 ounces diced tomatoes

1/4 tsp crushed red pepper flakes

1/8 tsp paprika

2 c. cheese tortellini

2 c. spinach uncooked

1 c. half and half

1/4 c. Mozzarella cheese shredded

salt to taste

How to make Creamy Sausage Tortellini with Spinach, Tomatoes and Mozzarella cheese sauce

Step 1: Cook the sausage in a large skillet over medium heat, crumbling it as it cools until done and no longer pink. Drain the fat from the skillet when done.

Step 2: To the same skillet, add the diced tomato along with the liquid from the can followed by the red pepper flakes, paprika. Stir over a low simmer.

Step 3: Following the package directions cook the tortellini in a different pan. Drain when done and add the tortellini to the pan with the sausage and tomatoes. Add in the uncooked spinach and stir. Pour in the half and half and bring to a gentle boil. Decrease the heat to a simmer, cover the skillet, and cook for a few minutes more until the spinach has welted.

Step 4: Uncover, stir and bring the mixture to a gentle medium bowl. Then, add in 1/4 cup of the mozzarella cheese. Stir until the cheese has melted.

Step 5: If needed, add more salt, extra paprika, and extra crushed red pepper flakes to taste.
