Ingredients

10 oz. dry pasta (any kind)

1 lb boneless skinless chicken breast

1 tsp garlic powder

1 tsp Italian seasoning

1 tsp paprika

salt & pepper to taste

2 tbsp olive oil

1 tbsp butter

4 cloves garlic minced

1 c. tomatoes diced

2 c. spinach chopped, optional

2 c. heavy cream (or 16 ounces)

1/2 c. Parmesan cheese shredded or grated

salt & pepper to taste

How to make Creamy Garlic Chicken Pasta (with Tomato & Spinach)

Step 1: Following the package directions, cook the pasta in a large pot of salted boiling water until al dente. Drain when done.

Step 2: With salt, garlic powder, Italian seasoning, paprika, and a generous amount of salt and pepper, season both sides of the chicken breasts.

Step 3: In a large heavy-duty pan, heat the olive oil over medium-high heat. Once the oil is hot, add the chicken breasts to the skillet and cook each side for about 5 minutes until cooked through. When done, remove from the heat and keep the chicken breasts aside.

Step 4: Add the butter to the now-empty pan. Once melted, add the garlic and cook for about a minute until aromatic. Then, add the tomato along with the spinach and continue to cook for another 2 to 3 minutes until soft and the spinach has wilted.

Step 5: Decrease the heat, then add the heavy cream and Parmesan cheese. Stir well until completely combined and the sauce is creamy. To taste, season with a pinch of salt and pepper.

Step 6: Into thin slices or cubes, slice the chicken, then add them back to the pan along with the pasta. Toss to combine. Enjoy!
