Creamy Garlic Chicken Pasta (with Tomato & Spinach)

Prep Time: 5 mins | Cook Time: 20 mins | Servings: 6

This is the ultimate comfort food and my family’s number one favourite pasta and chicken meal! Easily and quickly make this with pasta, chicken, spinach, seasonings, loads of delicious garlic, and Parmesan cheese. Ready in less than thirty minutes, this incredible dish surely is one of the perfect weeknight meals to make even on the busiest days!

Ingredients

10 oz. dry pasta (any kind)

1 lb. boneless skinless chicken breast

1 tsp garlic powder

1 tsp Italian seasoning

1 tsp paprika

salt & pepper to taste

2 tbsp olive oil

1 tbsp butter

4 cloves garlic minced

1 c. tomatoes diced

2 c. spinach chopped, optional

2 c. heavy cream (or 16 ounces)

1/2 c. Parmesan cheese shredded or grated

salt & pepper to taste

How to make Creamy Garlic Chicken Pasta (with Tomato & Spinach)

Step 1: Following the package directions, cook the pasta in a large pot of boiling water until al dente.

Step 2: With salt, garlic powder, Italian seasoning, paprika, and a generous pinch of salt and pepper, season the entire chicken breasts.

Step 3: In a large heavy-duty pan, heat the olive oil over medium-high heat. Add the chicken breasts to the hot oil and cook on each side for about 5 minutes until completely cooked. Take the cooked chicken breasts off the heat and set them aside.

Step 4: Add the butter and garlic to the same pan and cook for about a minute until aromatic. Add the tomato along with the spinach and continue to cook for another 2 to 3 minutes until soft and the spinach has wilted.

Step 5: Decrease the heat, then add the heavy cream and Parmesan cheese to the skillet, Mix well until combined and the mixture is creamy. To taste, season with salt and pepper.

Step 6: Drain the pasta when done cooking. And into thin slices, slice the chicken. Add both to the skillet, toss, and serve!
