Creamy Cornbread Casserole

If you are looking for the easiest recipe. This is it! This Creamy Cornbread Casserole reminds me of the corn cakes from famous Mexican chains. It makes me want to scoop it like ice cream!

Don’t be fooled by the simple ingredients. If you have doubts, I understand, but even if this is made mostly with canned ingredients, this turned out amazing as I expected. If you are in a rush, this recipe will save you. It’s incredibly easy and quick to throw together using six ingredients and a few simple-to-follow steps. The result is a perfectly textured casserole but not at all mushy. The flavour is great, and the aroma while baking is fantastic! If you have not tried this yet, you should. It’s crazy amazing, I’m sure you’ll be making this again and again!

My friend gave me this recipe almost a year ago. I tried this casserole immediately, and this has been part of our favourite list since then. If desired, you can add chopped jalapeno or a can of drained green chillies with a dash of cumin for extra goodness.

Ingredients

2 Eggs

1 (14.75 oz.) can cream-style corn

1 c. sour cream

1 (8 oz.) package dry cornbread mix

8 oz. Cheddar cheese, shredded

1 (15 oz.) can whole kernel corn, drained and 1/2 liquid reserved

How to make Creamy Cornbread Casserole

Step 1: Prepare the oven. Preheat it to 400 degrees F or 200 degrees C.

Step 2: Lightly butter a 9 x 13-inch baking dish.

Step 3: Place the corn, reserved liquid, eggs, cornbread mix, and sour cream in a large mixing bowl. Mix well until incorporated.

Step 4: Into the prepared pan, pour the batter and sprinkle with cheese. Place in the preheated oven and bake the casserole for about 30 minutes or until golden brown.
