A full meal in one. Chicken Rice Casserole is my perfect go-to dinner. One of the few dishes I turn to when I need something quick and easy. There are so many reasons I love this casserole – it’s comforting, satisfying, and a complete meal. Creamy, cheesy, and a hearty dish that my whole family ask for over and over again. A classic that never gets old. Not fussy, super simple, no need to precook the rice or chicken, just put everything together, stir, and pop in the oven. In no time, you have this awesome meal on your dinner table.

3 c chicken broth
2 (10.5 ounces) can cream of celery soup
1/4 c (1/2 stick) butter, melted
2 large boneless skinless chicken breasts, cubed
2 c white rice, uncooked
1 tsp kosher salt
1/2 tsp freshly ground black pepper
1 tsp garlic powder
1/2 tsp dried thyme
1 c cheddar cheese, grated
How to make Chicken Rice Casserole
Step 1: Prepare the oven. Preheat it to 375°F.
Step 2: Grab a 9 x 13-inch baking dish and grease it well. Set aside.
Step 3: Combine the chicken broth, cream of celery soup, and butter in a medium bowl until well incorporated before adding in the rice, chicken, salt, pepper, garlic powder, and thyme.
Step 4: Transfer the rice mixture into the prepared dish. Use aluminium foil to cover it tightly.
Step 5: Place inside the preheated oven and bake for about an hour and 15 minutes.
Step 6: Remove the cover and evenly sprinkle the cheese over the casserole. Bake for another 10 minutes or until the cheese has melted and bubbly.
Step 7: Once done, remove from the oven and allow the casserole to rest for at least 10 minutes before serving. Enjoy!
