1 lb (450 grams) large shrimp, peeled and deveined
14-oz. pork or chicken sausage, sliced
2 tbsp Cajun seasoning
2 tbsp olive oil
1 tbsp unsalted butter
3 cloves garlic, finely diced
1 small yellow onion, diced
2 red bell peppers, chopped into chunks
1/3 c. (80ml) low-sodium vegetable broth
1 tsp salt and pepper
1 3/4 c. heavy cream
1/2 c. grated Parmesan, optional
1 tbsp fresh parsley, chopped
How to make Creamy Cajun Shrimp with Sausage
Step 1: Combine the shrimp and sausage in a large bowl. Add the olive oil followed by the Cajun seasoning, then toss to coat.
Step 2: In a large skillet, heat the oil over medium-high heat. Once the oil is hot, add the shrimp and sausage to the skillet and cook for about 5 minutes, stirring constantly until cooked through. Transfer the cooked shrimp and sausage to a plate when done.
Step 3: Melt the butter in the now-empty skillet. Add the onion once the butter has melted, and stir fry until translucent. Add the bell peppers and cook for another 2 to 3 minutes. Add the garlic and cook for a minute more until aromatic. Then, pour in the vegetable broth and cook further until the sauce has slightly reduced.
Step 4: Adjust the heat to low, then add the heavy cream. Bring the mixture to a gentle simmer, stirring often. Adjust the taste according to taste. Add the Parmesan cheese. Simmer for a few minutes until the cheese has melted.
Step 5: Return the grilled shrimp and sausage to the skillet and sprinkle with chopped parsley. Over the shrimp and sausage, spoon the sauce.
Step 6: Over steamed vegetables or cauliflower rice, serve the Creamy Cajun shrimp with sausage. You can enjoy it with rice or pasta as well.
