2 tbsp Olive oil
6 ounces andouille sausage or smoked sausage (thinly sliced)
1 pound large shrimp (peeled and deveined)
2-3 cloves garlic (chopped)
1 tsp Cajun seasoning (or Creole seasoning)
½ tsp dried Oregano
1 red bell pepper (thinly sliced)
½ yellow onion (thinly sliced)
1 tsp brown sugar
1 c. chicken broth sodium-free
½ c. crushed tomatoes
⅔ c. Grated Parmesan
1 c. heavy cream
10 oz. fettuccine pasta
1 tbsp parsley (chopped)
4 tsp Cajun seasoning (or Creole seasoning)
Kosher salt and fresh cracked black pepper (to taste)
How to make Creamy Cajun Shrimp Pasta with Sausage
Step 1: Coat the shrimp well with salt, pepper, Cajun seasoning, and Oregano.
Step 2: Into the bottom of a hot large skillet over medium-high heat, drizzle the olive oil. Add the shrimp and cook for about 2 minutes. Turn the shrimp and continue to cook for additional 2 minutes. Transfer the shrimp to a plate when done.
Step 3: Drizzle with a little more olive oil on the bottom of the same skillet. Add the sausage and cook for approximately 4 to 5 minutes until brown and caramelized. Set the sausage aside when done.
Step 4: Following the package directions, cook the pasta into salted boiling water until al dente.
Step 5: Adjust the heat to a medium, then drizzle a little more oil to the bottom of the same pan. Add the onion along with the bell pepper, Cajun seasoning, brown sugar, and a generous pinch of salt. Saute until the pepper and onion have slightly softened, scraping the bottom of the pan to release the browned bits. Then, add the garlic and continue to cook for another 30 seconds until aromatic.
Step 6: To the pan, add the crushed tomatoes, chicken broth, and heavy cream. Bring everything to a simmer, stirring and scraping the bottom of the pan. Allow the mixture to simmer for a few minutes.
Step 7: Add the Parmesan to the sauce once simmering and stir until incorporated. Then, add the cooked pasta and sausage. Stir and cook for about 2 to 3 minutes until heated through. Adjust the salt and pepper according to taste, then add the shrimp.
Step 8: Serve the creamy Cajun shrimp pasta with sausage garnished with some chopped parsley. Enjoy!
