How to make Creamy Cajun Shrimp Pasta with Sausage
Step 1: In salt, pepper, Cajun seasoning, and oregano mixture, toss the shrimp.
Step 2: On medium-high, heat a large skillet. Once hot, drizzle the pan with olive oil. Add the shrimp and cook for about 2 minutes. Flip and continue to cook the other side for another minute or two. To a plate, transfer the cooked shrimp and set it aside.
Step 3: With a little more olive oil, drizzle the same pan. Add the sausage and cook for about 4 to 5 minutes until brown and caramelized. To a plate, set the cooked sausage aside.
Step 4: Cook the pasta in salted boiling water until al dente.
Step 5: Adjust the heat to medium and add more olive oil to the pan. Add the onion along with the red bell pepper, Cajun seasoning, brown sugar, and a generous pinch of salt. Saute while scraping the browned bits from the bottom of the pan until the onion and pepper have softened. Add the garlic and continue to cook for another 30 seconds until aromatic.
Step 6: To the pan, add the crushed tomatoes, chicken broth, and heavy cream. Allow the mixture to simmer for a few minutes, stirring and scraping the brown bits.
Step 7: Stir in the Parmesan once the mixture is simmering until incorporated. Add the cooked pasta followed by the sausage. Toss to combine and continue to cook for 2 to 3 minutes more until heated through. To taste, season with salt and pepper. Then, add the shrimp.
Step 8: Before serving, garnish with some chopped parsley. Enjoy!
