Roasted Butternut Squash:
1 tbsp olive oil
2 c. butternut squash, peeled, seeded, and cubed
salt and pepper
Sausage:
½ pound sausage, crumbled, without casings
1 tbsp olive oil
Creamy Pasta Sauce:
6 ounces spinach
1 tbsp olive oil
4 garlic cloves minced
1 c. heavy cream
¼ tsp salt
⅓ c. Parmesan cheese shredded
Pasta:
8 ounces farfalle (bow-tie pasta)
How to make Creamy Butternut Squash Pasta with Sausage and Spinach
Roast Butternut Squash:
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Combine the cubed butternut squash, olive oil, salt, and pepper in a large bowl. On a parchment-paper-lined baking sheet, spread the squash in a single layer. Make sure not to overcrowd the baking sheet.
Step 3: Place in the preheated oven and bake for about 30 minutes. Remove from the oven when done.
Cook Sausage:
Step 4: Heat 1 tbsp olive oil in a medium skillet over medium heat.
Step 5: Once the oil is hot, add the crumbled sausage to the skillet and cook for about 10 minutes, stirring until completely cooked. Set the cooked sausage aside when done.
Creamy Sauce:
Step 6: Heat 1 tbsp olive oil in another large skillet. Add the minced garlic and spinach. Cook for about 5 to 7 minutes over medium heat, stirring often until the spinach begins to wilt.
Step 7: To the skillet, add the heavy cream. Bring the sauce to a boil, then quickly decrease the heat to a simmer.
Step 8: Add the shredded Parmesan cheese. Stir constantly over low heat until the cheese has melted, then remove from the heat.
Step 9: To taste, season with 1/4 tsp salt.
Cook the Pasta and Assemble:
Step 10: Following the package direction, cook the pasta until al dente. Drain the pasta when done.
Step 11: Toss the pasta into the large skillet with the creamy spinach sauce. Add the cooked sausage and stir. If needed, season with salt and pepper.
Step 12: On top, add the roasted butternut squash. You can stir it or leave the squash on top.
