Roasted Butternut Squash:
1 tbsp olive oil
salt and pepper
2 c. butternut squash, peeled, seeded, and cubed
Sausage:
½ pound sausage, crumbled, without casings
1 tbsp olive oil
Creamy Pasta Sauce:
4 garlic cloves minced
1 tbsp olive oil
1 c. heavy cream
6 ounces spinach
¼ tsp salt
⅓ c. Parmesan cheese shredded
Pasta:
8 ounces farfalle (bow-tie pasta)
How to make Creamy Butternut Squash Pasta with Sausage and Spinach
Roast the Butternut Squash:
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Add the cubed butternut squash, oil, salt, and pepper in a large bowl. Toss well to coat the cubed squash.
Step 3: On a parchment paper-lined baking sheet, spread the squash in a single layer. Avoid overcrowding the sheet.
Step 4: Place the baking sheet in the preheated oven and bake for about 30 minutes.
Cook Sausage:
Step 5: In the meantime, heat a tbsp olive oil in a medium skillet over medium heat. Once the oil is hot, add the crumbled sausage to the skillet. Cook for approximately 10 minutes, stirring constantly until the sausage is completely cooked. When done, set the sausage aside.
Creamy Sauce:
Step 6: Heat a tbsp olive oil in another, large skillet over medium heat. Once the oil is hot, add the minced garlic and spinach to the skillet. Cook for about 5 to 7 minutes, stirring often until the spinach begins to wilt.
Step 7: To the skillet, add the heavy cream. Bring the mixture to a boil, then quickly decrease to a simmer. Now, add the shredded Parmesan cheese. Stir the sauce constantly over low to medium heat until the cheese has melted. Take the skillet off the heat when done.
Step 8: To taste, season with a sale and about 1/4 tsp salt.
Cook the Pasta and Assemble:
Step 9: Following the package directions, cook the pasta until al dente. Drain when done.
Step 10: Add the drained cooked pasta to the large skillet with the creamy spinach sauce along with the cooked sausage. Stir well. If desired, season with salt and pepper.
Step 11: Place the roasted butternut squash on top of the pasta. Stir if desired, or leave the squash on top. Enjoy!
