A comforting, super delightful chicken dish that’s perfect for a weeknight dinner with family and impressive enough to serve to guests. We always enjoy this Creamy Baked Chicken and Mushrooms on a bed of rice for a filling meal.
Ingredients
3 skinless, boneless chicken breast halves
1 tsp kosher salt
¼ tsp freshly ground black pepper or more to taste
2 tbsp olive oil
1 medium white onion, chopped
2 tbsp chopped fresh parsley
1 tsp poultry seasoning
¼ tsp cayenne pepper
1 (7 oz.) can whole mushrooms, drained
1 (10.5 oz.) can condense cream of chicken soup
1 c. heavy cream
¼ c. buttermilk
4 slices Swiss cheese
How to make Creamy Baked Chicken and Mushrooms
Step 1: Prepare the oven. Preheat it to 350 degrees F or 175 degrees C.
Step 2: With salt and pepper, season the chicken breasts.
Step 3: In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the onion and cook for about 5 minutes until semi-translucent. Stir in the parsley until coated. Add the chicken to the skillet and cook each side for about 5 minutes until brown. Season with poultry seasoning and cayenne, stirring to coat the chicken.
Step 4: In a 9 x 13-inch dish, transfer the chicken, top with mushrooms, and put away on a warming plate.
Step 5: In the meantime, place the soup, heavy cream, and buttermilk in a mixing bowl. Mix well before adding in the onion mixture. Mix well. Pour this on top of the chicken and top with Swiss cheese. Note to ensure that every area is covered.
Step 6: Place in the preheated oven and bake for about 1 hour and 35 minutes until the chicken breasts are no longer pink in the middle.
Step 7: Before serving, let the dish rest for at least 15 minutes.
Notes:
If using fresh mushrooms, add them to the skillet after taking the chicken out and cook until soft.
Swap the regular Swiss cheese with baby Swiss cheese. Instead of olive oil, use butter. And use any variety of onions you like.
For more portions and if you prefer to use small pieces of chicken, cut them in half lengthwise.
You can add extra spices to the chicken after browning them if desired. You can even change the spices to your liking.
