Creamy Bacon Chicken

Today is chicken dinner. I am making our favourite, creamy bacon chicken. It is a very decadent and scrumptious meal that you can throw together in under thirty minutes using only pantry ingredients. Lush chicken smothered in a creamy sauce with bacon bits. Serve this with a simple side salad or your favourite veggies on the side for a satisfying meal perfect for everybody!

The chicken is pan-fried for that extra flavour and cooked in a creamy sauce with bacon pieces. This is no doubt a stand-out meal that is very comforting and loaded with tons of flavours!

INGREDIENTS

1 tbsp butter

2 large chicken breasts cut in half lengthwise

6 strips bacon cut into small pieces

1/4 tsp garlic powder

1/2 tsp lemon juice

1/2 c. chicken broth

Flour for dredging

1 c. heavy/whipping cream

Pepper to taste

How to make Creamy Bacon Chicken

Step 1: To a skillet, add the bacon (cut into small pieces) and fry for about 10 minutes over medium-high heat until crispy. Set the bacon aside when done, keeping about 2 tbsp of the bacon grease in the pan.

Step 2: In the meantime, slice the chicken in half lengthwise to make 4 smaller pieces, then sprinkle the cutlets with the garlic powder and pepper before coating them in flour.

Step 3: In the same skillet with the remaining bacon grease, add the chicken and sear for about 4 to 5 minutes per side over medium-high heat until golden. Decrease the heat as needed. Set the chicken aside when done.

Step 4: To the pan, add the chicken broth, lemon juice, and butter. Allow the mixture to bubbly for about 3 to 4 minutes until reduced by half.

Step 5: Now, whisk in the cream, and once the mixture begins to bubble, return the chicken and bacon to the pan. Continue to cook for additional 5 minutes or until the chicken is completely cooled and the sauce has reduced.
