CREAMY AND HEALTHY TUNA PASTA SALAD

Today is Pasta Day! We have pizza, taco, chicken, and pasta day. My kids enjoy our theme days because they get to pick their favourites. It is Tuesday, and they are looking forward to another pasta surprise. I found this amazing recipe online and I have been loving every bit of it! This creamy tuna pasta salad is so easy to whip up. It is divine and healthy, which makes this perfect if you are a dainty mom like me. I love serving this tuna pasta salad cold. I think the flavours blend well since you’ll let this sit for a while. Just keep this in the fridge and serve the next day. And if you are looking for another meal to bring to potlucks, this creamy and healthy tuna pasta salad is a great option.

Ingredients

1 cup Frozen Green Peas thawed

2-3 Celery Stalks chopped

8 oz. Whole Wheat Penne or gluten-free

½ Red Onion thinly sliced, to garnish

6.7 oz. Tuna in Olive Oil 1 jar, drained and flaked

Creamy sauce/dressing:

1-2 Garlic Cloves minced

1 cup Plain Greek Yogurt

½ Lemon juiced

1 tbsp Dijon Mustard

1 Avocado very ripe

Kosher salt and pepper, to taste

1 tsp Chili Flakes or to taste

2 tbsp Chopped Fresh Dill plus more to garnish

HOW TO MAKE CREAMY AND HEALTHY TUNA PASTA SALAD

Step 1: Following the package direction, cook the pasta in a large pot with boiling salted water until al dente. Drain when done and rinse under cold water.

Step 2: Add the sauce ingredients (garlic cloves, Greek yoghurt, lemon juice, Dijon mustard, avocado, chopped fresh dill, chilli flakes, salt, and pepper) to a food processor. Process until well mixed. You can add more seasonings if needed.

Step 3: Place the pasta in a mixing bowl. Pour the sauce over and add the tuna, peas, and celery. Toss well.

Step 4: This tuna pasta salad is best to serve cold. Enjoy!
