Ingredients
2 pounds potatoes, (about 6) peeled and cubed, about an inch size
1/4 cup flour
3 tablespoons butter
1 teaspoon salt
1/4 teaspoon pepper
2 cups milk
Pinch nutmeg
fresh minced parsley
How to make Creamed Potatoes
Step 1: Place the potatoes in a large saucepan and cover them with water. Bring to a boil, then decrease the heat and continue to cook for approximately 15 minutes until fork tender.
Step 2: Melt the butter in a different saucepan. Once melted, stir in the flour salt, pepper, nutmeg until smooth. Slowly whisk in the milk, then bring the mixture to a boil. Continue cooking, stirring constantly until thickened.
Step 3: Drain the potatoes when done and transfer them to a serving dish. Over the potatoes, pour the cream mixture and lightly toss to coat. Garnish with some fresh parsley before serving. If desired, you can add sliced sweet onion to the potatoes while cooking. This adds extra flavour to the potatoes.
