3 cups swan’s down cake flour
3 cups domino sugar
6 large Eggs
3 stick land o’ lakes salted sweet cream butter
1 pkg Philadelphia cream cheese (8 ounces)
1 tablespoon pure vanilla extract
1 teaspoon pure lemon extract
How to make Cream Cheese Pound Cake
Step 1: In a bowl, place 3 sticks of butter and the cream cheese. Set aside until soft.
Step 2: Sift five times the Swan’s Down Cake Flour, then measure into a medium-sized bowl.
Step 3: Using Bakers Joy, grease a Bundt cake pan or 10-inches tube pan. If desired, use shortening and flour instead. Set the pan aside.
Step 4: Set aside 3 cups of Domino sugar.
Step 5: Cream the already soft butter and cream cheese. Add in the sugar a cup at a time and beat until fluffy. Add in a cup of flour alternately with 2 eggs, beating on low speed until well combined. Adjust the speed to high or surge and beat for another 5 minutes. Then, stir in the flavour.
Step 6: Into the prepared pan, pour the batter. Place in the 300 degrees preheated oven and bake for about 1 1/2 hours until a toothpick inserted in the middle of the cake comes out clean.
Frosting:
Step 7: Beat on low speed a box of Domino Confectioners sugar with a stick of butter or margarine, around 1/4 cup of milk, and a tsp pure vanilla extract in a large bowl until creamy. Add more milk if desired until you reached your desired consistency.
Step 8: If making a lemon frosting, use the same steps. For a perfect effect, add in a bit of yellow food colouring. If desired, you can also make a lemon glaze. Simply add lemon juice to confectioners sugar in place of milk and butter.
Step 9: If making a chocolate frosting, use 2/3 cup Hershey’s baking cocoa with a stick of melted pure butter, a box of Domino confectioners sugar, 1/3 cup milk, and a tsp vanilla flavour. First, melt the butter, then stir in the cocoa. Add in the powdered sugar alternately with milk. Beat until you reach spreading consistency. If needed, add in a little amount of milk. And stir in the vanilla. This makes approximately 2 cups of frosting.
