Cream Cheese Lemon Bars

A friend introduces me to these lemon bars. She knows how I love lemon bars, and she’s not surprised that I almost finished the whole thing! The lemony, sweet, cream cheesy, and buttery taste/texture of these cream cheese lemon bars is paradise!

Ingredients

Crust:

1 c. (2 sticks) butter – chilled and cut into small cubes

2 c. all-purpose flour

½ tsp salt

½ c. granulated sugar

Filling:

6 large eggs

8 oz. cream cheese – softened

¾ c. fresh-squeezed lemon juice

¼ c. flour

2 c. granulated sugar

1 tsp vanilla

⅓ c. powdered sugar – plus more for topping

How to make Cream Cheese Lemon Bars

Step 1: Prepare the oven. Preheat it to 350 degrees. Using foil or parchment paper, line a 9 x 13-inch pan leaving plenty of overhang around the edges. This will make it easier to lift the bars out.

Step 2: For the crust, place the flour, sugar, salt, and butter cubes in a food processor or blender. Beat until you have fine crumbs. Alternately, you can do this using a fork, pastry cutter, or using your fingers.

Step 3: Into the prepared pan, press the crust. Place in the preheated oven and bake for about 10 minutes.

Step 4: In the meantime, prepare the filling. Place the cream cheese and sugar in a large bowl. Mix well until smooth, then stir in the flour, powdered sugar, lemon juice, eggs, and vanilla until completely blended.

Step 5: Over the crust, pour the filling, and continue baking for additional 30 minutes.

Step 6: Remove from the oven when done and let the bars cool for about 20 minutes. Tent and chill in the fridge for at least 4 hours or overnight.

Step 7: Once set, take the bars off the pan by lifting the foil edges. Cut into quarters and sprinkle with powdered sugar. Enjoy!
