I have been looking for the best banana bread recipe for too long! Thank goodness I found this easy recipe to amp up my game. This soft, fluffy banana bread with cream cheese filling is super impressive and to die for!
INGREDIENTS
Bread:
1/4 c. liquid-state coconut oil (canola or vegetable may be substituted)
1 large egg
1/4 c. granulated sugar
1/2 c. light brown sugar, packed
1/4 c. cup sour cream (you can use lite or Greek yoghurt may be substituted)
2 tsp vanilla extract
1/2 tsp baking powder
1 c. all-purpose flour
1/2 tsp baking soda
pinch salt, optional and to taste
1 c. mashed ripe bananas (about 2 large bananas)
Cream Cheese Filling:
1/4 c. granulated sugar
1 large egg
3 tbsp all-purpose flour
4 oz. softened brick-style cream cheese (you can use lite)
How to make Cream Cheese-Filled Banana Bread
Step 1: Prepare the oven. Preheat it to 350 degrees F. Grease a 9 x 5-inch loaf pan and flour it. Or spray it using floured cooking spray. Set the pan aside.
Banana Bread:
Step 2: Place the egg, sugars, coconut oil, sour cream, and vanilla in a large bowl. Whisk well until combined.
Step 3: Stir in the bananas until well mixed.
Step 4: To the bowl, add a cup of flour, baking powder, baking soda, and salt (optional). Fold using a spatula or use a spoon to gently stir until just mixed. Keep in mind not to over-mix the mixture. Set aside.
Step 5: Pour 2/3 of the batter into the prepared loaf pan. Using a spatula, lightly smooth the top, pushing the batter into the corners and side as needed. Set aside.
Cream Cheese Filling:
Step 6: Place the filling ingredients in a large bowl and mix well. You can also use a hand mixer to combine.
Step 7: Over the bread, evenly pour the filling mixture. Using a spatula, lightly smooth the top. Push the filling into the corners and sides as needed.
Step 8: Pour the rest of the batter on top. Again, lightly smooth the top using a spatula. Be very careful not to disturb the cream cheese layer.
Step 9: Place the loaf pan in the preheated oven and bake for about 48 to 50 minutes or until the top of the loaf is domed, golden, and a toothpick inserted in the centre comes out clean. Take note that the cream cheese layer ever gets completely solid.
Step 10: Remove the bread from the oven when done and allow it to cool in the pan for at least 15 minutes. Then, turn it out on a wire rack and let the bread cool completely.
Step 11: Slice the bread and serve. Keep any leftovers in an airtight container and store them at room temperature for up to a week. You can also freeze it for up to 6 months.
Tips:
If you notice that the tops and sides of the bread are browning too much at the 30-minute mark, grab a sheet of foil and tent the pan. Note that the baking time varies depending on the moisture content of bananas, cream cheese, climate, and oven.
