Cream Cheese Chicken Tacos

Prep Time: 20 mins | Cook Time: 10 mins | Total Time: 30 mins | Yield: 5 Servings

This delicious taco recipe was introduced to me by my dear friend, Alice. I am so glad that I decided to give it a try. I am sure that you are going to love it as well. Enjoy!

Ingredients:

1 package (8 ounces) cream cheese

2 clove garlic, minced

2 cups deli rotisserie chicken or leftover roast/baked chicken shredded

1 bunch green onion, thinly sliced

1/2 teaspoon salt

1/4 teaspoon pepper

1 cup shredded cheddar cheese

10 medium corn tortillas

canola oil for frying

Directions:

Step 1: Prepare the oven and preheat to 220 degrees C or 425 degrees F.

Step 2: Place a skillet on the stove and turn the heat to medium.

Step 3: Add 1 tablespoon of oil and allow it to become hot.

Step 4: Add 1 tortilla at a time and fry each until the colour turns light brown. Repeat this process to the rest of the tortillas. Make sure to add more oil if necessary.

Step 5: Place the fried tortillas on a clean plate lined with paper towels to drain any excess oil.

Step 6: Place a saucepan on the stove and turn the heat to low.

Step 7: Add the cream cheese and allow it to melt. Make sure to stir from time to time.

Step 8: Add in the shredded chicken, green onion, garlic, and shredded cheese.

Step 9: Remove the saucepan from the stove. Stir the mixture until well blended.

Step 10: Fill each taco shell with the chicken mixture.

Step 11: Arrange the taco shells into a 9×13-inch baking dish.

Step 12: Place the baking dish inside the preheated oven and bake for 8 to 10 minutes or until brown.

Step 13: Remove the taco shells from the oven and allow them to cool at room temperature for at least 5 minutes.

Step 14: Serve and enjoy!
