CRACKED OUT TATER TOT BREAKFAST CASSEROLE

This casserole is an incredible make-ahead casserole made with only six ingredients; bacon, tater tots, Ranch salad, shredded cheddar cheese, eggs, and milk. Serve this for breakfast, lunch, or dinner right away or store it in the fridge or freeze for later. Perfect for an easy and quick breakfast. Start your day right with this delicious cult favourite!

Searching for recipes online is one of my favourite past time. There I found this Cracked Out Tater Tot Breakfast Casserole. It was like love at first sight so I decided to give this a try right away. And I was blown away by how easy this is to make. The result is what I was expecting – delicious, filling, and incredible!

Ingredients

2 pounds bacon

1 (30-32 ounces) bag frozen tater tots

1 (1 ounce) package Ranch Salad Dressing & Seasoning Mix

2 c. shredded cheddar cheese

8 Eggs

2 c. milk

HOW TO MAKE CRACKED OUT TATER TOT BREAKFAST CASSEROLE

Step 1: Prepare the oven. Preheat it to 350 degrees F. Using cooking spray, lightly grease 9 x 13-inch baking dish.

Step 2: Cook the bacon in a large skillet. Into pieces, chop the cooked bacon.

Step 3: Place the tater tots, cooked bacon, and cheeses in a large bowl, then pour into the greased baking dish.

Step 4: In another bowl, whisk the eggs, Ranch mix, and milk, then pour this over the tater tot mixture. If baking later, cover the casserole and store it in the fridge.

Step 5: Place the casserole in the preheated oven and bake for about 50 to 60 minutes until the eggs are set.

Notes:

Feel free to substitute bacon with turkey bacon.

Make this casserole in advance and simply store it in the fridge or freezer.

Thaw the casserole after freezing before baking as directed.

When reheating, thaw the casserole completely if frozen, then tent with aluminium foil and bake for about 30 to 40 minutes at 350 degrees F until heated through.
