CRACKED OUT HASH BROWN BREAKFAST CASSEROLE

This cracked-out hash brown breakfast casserole is made with only six ingredients and is seriously one of the best casseroles you’ll ever make! Throw this together in advance for a quick meal, and enjoy all your favorite breakfast must-haves in a single casserole!

Ingredients

8 large eggs

2 pounds bacon

2 c. shredded cheddar cheese

1 (30 to 32 ounces) bag frozen shredded hash browns, thawed

2 c. milk

1 (1 ounce) packet of dry Ranch dressing mix

HOW TO MAKE CRACKED OUT HASH BROWN BREAKFAST CASSEROLE

Step 1: Prepare the oven. Preheat it to 350 degrees F. Using cooking spray, lightly
Grease a 9 x 13-inch pan.

Step 2: Cook the bacon in a large skillet until crispy. Transfer the cooked bacon to a paper towel-lined plate. Once the bacon is cool enough to handle, chop them. Make sure to leave most of the bacon drippings in the skillet.

Step 3: To the same skillet, add the hash browns and cook until lightly brown. In the prepared baking dish, transfer the hash browns and top with the chopped bacon and cheese.

Step 5: Combine the eggs with the ranch dressing and milk until well blended. Then, pour this over the hash brown mixture. At this point, you can cover the baking dish and freeze it. Or if baking right away, pop the baking dish in the preheated oven and bake for about 60 to 70 minutes, uncovered.

Notes:

For this recipe, you can also use turkey bacon. Or 2 c. pre-cooked bacon.

Feel free to prep the casserole ahead and freeze it.

When baking after refrigerating, make sure to add a couple of minutes to the cooking time.

Thaw the frozen casserole completely and bake as instructed.

Before reheating, thaw the frozen casserole fully. Then, cover with aluminium foil and reheat for about 30 to 40 minutes in a 350 degrees F oven until warmed through.
