Cozy Chicken And Dumplings

What better way to spend the end of a busy day but with a cosy, comforting bowl of this Chicken and Dumplings. Every spoon simply takes your weariness away. Feet-up, music on, relax and enjoy this cosy, delicious meal.

Ingredients

SOUP:

2 tbsp vegetable oil

2 pounds boneless, skinless chicken breast (905 grams), cubed

1 c. diced yellow onion

1 c. sliced carrot

3 cloves garlic cloves, minced

1 tsp salt

5 tbsp unsalted butter

6 tbsp all-purpose flour

6 c. chicken broth (1 ½ litre)

½ c. heavy cream (120 ml)

½ tsp dried thyme

2 bay leaves

1 ½ c. frozen peas (225 grams)

4 tbsp fresh parsley, minced

DUMPLINGS:

2 c. all-purpose flour (250 grams)

1 tbsp baking powder

½ tsp salt

½ tsp pepper

1 ⅓ c. heavy cream (320 ml)

How to make Cozy Chicken And Dumplings

Step 1: Heat the vegetable oil in a 6-quart Dutch oven over medium-high heat. Once the oil is hot, add the chicken to the pot and cook on both sides until brown. Remove from the pot when done and set the chicken aside.

Step 2: In the same pot, add the carrots and onion. Cook for about 3 minutes until just tender. Add in the garlic, stir, and continue to cook for a minute more until aromatic.

Step 3: Adjust the heat to medium-low before adding in the butter and flour while stirring continuously for about 3 minutes to make that no lumps form.

Step 4: Return the chicken to the pot and the accumulated juices, then toss to coat. Now, add in the chicken broth, cream, thyme, and bay leaves and bring the mixture to a simmer. Then, add in the frozen peas once the soup is at a simmer, cover the pot, and continue to cook for additional 15 minutes.

To make the dumplings:

Step 5: Place the flour, baking powder, salt, pepper, and cream in a large bowl. Combine until you have a single mass dough.

Step 6: Into about an inch or 2 ½ cm diameter small balls, form the dough. You can use an ice cream scoop or large spoon to do this until you have about 14 to 16 dumplings.

Step 7: Into the simmering soup, drop the dough balls along with parsley. Cover and continue to simmer for another 15 minutes until the dumplings are completely cooked.

Step 8: When done, ladle the Chicken and Dumplings into bowls and serve. Enjoy!
