4 slices bacon, chopped
2 (12-oz) package kielbasa sausage, cut into 1/2” slices
1 1/2 lbs ground beef, 80/20
1 medium onion, diced
3 cloves garlic, minced
3 tbsp all-purpose flour
1 1/2 tsp salt
1/2 tsp black pepper
1 tsp chilli powder
1 (14.5-oz) can petite diced tomatoes, with liquid
2 (16-oz) cans baked beans, with liquid
1 (7-oz) can chop green chillies, with liquid
1 (15-oz) can sweet corn, with liquid
2 medium russet potatoes, peeled and cut into 1/2” cubes
1 c. water
2 tbsp parsley, chopped
HOW TO MAKE COWBOY STEW
Step 1: In a large pot, cook the bacon until brown and crispy. To a plate lined with a paper towel, transfer the bacon using a slotted spoon to drain.
Step 2: In the same pot, add the sausage to the bacon drippings and cook on both sides until brown. Make sure to adjust the heat as needed so the sausage does not burn. Transfer to the same plate as the bacon when done and set aside.\
Step 3: To the pot, cook the beef, onion, and garlic until the beef is no longer pink. Over the beef, sprinkle the flour, salt, pepper, and chilli powder, stir, and continue to cook for a minute more.
Step 4: Add in the diced tomatoes, baked beans, green chillies, sweet corn, potatoes, bacon, sausage, and water. Bring the mixture to a boil, then quickly decrease the heat to a simmer, and cook for another hour while stirring occasionally, covered.
Step 5: Garnish the stew with parsley before serving. If the stew is too thick, simply add more water. Enjoy!
