COWBOY STEW

PREP TIME: 15 MINS | COOK TIME: 1 HR 30 MINS | TOTAL TIME: 1 HR 45 MINS | SERVINGS: 8

This Cowboy Stew is crazy delicious! It’s so easy to make with three types of meat and veggies. Simmer everything for an hour to extract all the great flavours. Serve this wonderful stew with cornbread, beer bread, or crackers to wipe all those goodness!

INGREDIENTS

2 (12-oz.) package kielbasa sausage, cut into 1/2” slices

4 slices bacon, chopped

1 1/2 lbs ground beef, 80/20

3 cloves garlic, minced

3 tbsp all-purpose flour

1 medium onion, diced

1 tsp chilli powder

2 (16-oz.) cans baked beans, with liquid

1 (14.5-oz.) can petite diced tomatoes, with liquid

1 (15-oz.) can sweet corn, with liquid

1 (7-oz.) can (chopped) Green chilies, with liquid

1 c. water

2 tbsp parsley, chopped

2 medium russet potatoes, peeled and cut into 1/2” cubes

1 1/2 tsp salt

1/2 tsp black pepper

HOW TO MAKE COWBOY STEW

Step 1: In a large pot, cook the bacon until brown and crispy. To a plate lined with a paper towel, transfer the bacon using a slotted spoon to drain.

Step 2: To the pot drippings, cook the sausage on all sides. As needed, adjust the heat to prevent the sausage from burning. Transfer the sausage to the plate with bacon and set aside.

Step 3: To the pot, add the beef and garlic and cook until the beef is no longer pink. Stir in the flour, salt, pepper, and chilli powder and continue to cook for another minute.

Step 4: Now, add the diced tomatoes to the pot along with the baked beans, green chillies, sweet corn, potatoes, bacon, sausage, and water. Bring everything to a boil, then quickly decrease the heat. Put the lid on and simmer for about an hour, stirring often.

Step 5: Before serving, garnish the stew with some parsley. If the stew ends up too thick, pour in more water.
