This is already a pretty darn good lasagna! But with the tater tots, this cowboy lasagna is the bomb!
I have been scouting for new recipes to try. I have found a lot, but I just don’t have the time yet to try them all! Although, this Cowboy Lasagna is super hard to pass so I made it immediately! Thank goodness I did because it’s so good, my family was gone crazy! From there on, this has become one of our favourite rotations.
If you have a big family, you can easily make this lasagna in a 13 x 9-inch baking dish and get roughly 3 meals or 9 servings. But let’s face it, once you get a taste of this monster, you’ll never settle for just a single plate!
Ingredients
32 ounces (1 package) tater tots
4 tablespoons minced onions
1 pound of ground beef
10 3/4 ounces (1 can) tomato soup
15.25 ounces (1 can) corn
3 teaspoons dried ground mustard
roughly 3 tablespoons parsley, divided
roughly 4 c. Mozzarella cheese
A generous sprinkling of Worcestershire sauce
Salt and Pepper, to taste
How to make Cowboy Lasagna
Step 1: Cook the ground beef with spices. Drain when done and return to the pot along with a can of soup and corn. Let the mixture simmer for approximately 10 minutes.
Step 2: In the meantime, arrange the tater tots in a greased 9 x 13-inch baking dish in a single layer. Cover the tater tots with 2 cups of cheese, then pour the ground beef mixture over. Lastly, sprinkle with the rest of the cheese and 1 tablespoon parsley.
Step 3: Put the baking dish in a 350 degrees F oven and bake for about 30 minutes. When done, remove from the oven and allow the lasagna to stand for at least 5 minutes before serving. Enjoy!
