Cowboy Casserole

This scrumptious Cowboy Casserole is the perfect weeknight dinner loaded with ground beef, vegetables, cream of mushroom soup, and tons of cheese! Always a hit on potlucks and to feed a crowd. If you love a good casserole, this easy Cowboy Casserole recipe is a must!

Unlike the traditional casserole, this uses tater tots are the base. A seriously filling casserole to feed a hungry stomach. Incredibly filling, crazy delicious, and the perfect casserole idea excellent for everybody!

Ingredients

½ lb ground beef

1 small onion diced

2 garlic cloves minced

½ tsp black pepper

2 tsp seasoning salt divided

1 c. corn

1 can cream of mushroom soup

1 c. cheddar jack cheese divided

1/3 c. milk

¼ c. sour cream

1 package frozen tater tots

How to make Cowboy Casserole

Step 1: Prepare the oven. Preheat it to 375 degrees. And using nonstick cooking spray. Grease a 9 x 13-inch baking dish.

Step 2: Cook the ground beef in a large skillet with onion and garlic until brown. With black pepper and a tsp seasoning salt, season the ground beef mixture.

Step 3: Take the skillet off the heat once the beef is cooked through. Then, add the corn along with the cream of mushroom soup, milk, sour cream, and a half cup of cheese. Stir well until everything is incorporated.

Step 4: Into the prepared baking dish, transfer the mixture and top with a layer of tater tots. With the rest of the seasoning salt, season the tater tots.

Step 5: Into the preheated oven, place the casserole and bake for about 40 minutes. Remove from the oven when done and top the casserole with the rest of the half a cup of cheese. Place the casserole back in the oven and continue to bale for another 10 minutes until the cheese has melted.
