4 boneless pork chops
3 Eggs
1 c. flour
1-1/2 teaspoon cayenne
1-1/2 tablespoon paprika
1 tablespoon hot sauce
1 teaspoon fresh ground pepper
1 teaspoon salt
How to make Country Fried Pork Chops
Step 1: In a shallow plate, combine the flour, paprika, pepper, salt, and cayenne.
Step 2: In a small bowl, beat the eggs and hot sauce, then transfer to another shallow plate.
Step 3: In a plastic wrap, loosely tent the pork chop and pound it from the middle outward using the flat side of a meat hammer until the thickness is half of the original. Do this with the rest of the pork chops.
Step 4: In a heavy-high-sided pan such as a Dutch oven, add enough oil to cover the pork chop halfway.
Step 5: In the flour mixture, dredge the pork chops. Coat with the egg mixture and flour again. Put the breaded pork chops on a rack, allowing them to dry for at least 5 minutes.
Step 6: Meanwhile, heat the oil until the temperature reached 360 degrees F.
Step 7: Once the oil is very hot, add a pork chop into the skillet and cook for about 5 minutes (I used a timer). Keep an eye and ensure the temperature stays around 160 to 375 degrees F.
Step 8: Carefully flip the pork chop once the timer beeps and continue to fry the other side for additional 5 minutes. When done, transfer the pork chop on a paper towel-covered plate. Do this for the remaining pork chops, adjusting the temperature as necessary.
Step 9: Serve the Country Fried Pork Chops with extra hot sauce. Enjoy!
