This is my family’s favourite side dish. The savoury and sweet flavour of this corn bread-like side dish is to die for! It’s incredibly easy to throw together using only butter, cream corn, Jiffy corn muffin mix, sour cream, and whole kernel corn.

Every family has its side dish staple. Mine is this corn casserole that’s perfect for the Holidays. It’s almost Christmas, and we are already busy preparing. We are planning to throw only a simple meal. For the side dish, we are making this corn casserole and a simple side salad to go with our meal.

For the ingredients, you can use any of your favourite cheese. We like cheddar cheese, but you can use Monterey Jack Cheese, Mexican Cheese, Swiss Cheese, Colby Jack Cheese, or Gruyère Cheese. All the simple ingredients complement each other to give this casserole the perfect texture and undeniably delicious flavour. Be sure to give this corn casserole a try. I am sure you’ll never regret it!

INGREDIENTS

1/2 c. Butter (Melted)

1 can Creamed Corn

1 box Jiffy Corn Muffin Mix

1 c. Sour Cream

2 cans Whole Kernel Corn (drained)

HOW TO MAKE CORN CASSEROLE FOR THE HOLIDAYS

Step 1: To a bowl, place the Jiffy Corn Bread Mix, Creamed Corn, drained corn, sour cream, and melted butter. Using a spoon, gently mix the ingredients until just combined.

Step 2: Into an oven-safe pan greased with non-stick spray, pour the corn casserole. Place in 350 degrees preheated oven and bake the casserole for about 45 minutes.

Step 3: Take the casserole out of the oven when done and sprinkle on top some of the grated cheese. Return to the oven and continue to bake the casserole for another 10 minutes.

Step 4: Serve the casserole right away. Enjoy!
