Taco Bell is one of my favourite places! I like everything on their menu, and I am obsessed with their quesadillas! This easy copycat recipe is one of my most treasured recipes. I can easily whip this up whenever I am craving Taco Bell’s quesadilla. And the secret to success is the sauce! I never would have thought that it’s only simple to make using mayo as your base mixed with a couple of spices such as cayenne, garlic, and some pickled jalapenos. Easy peasy and tastes like the real thing!

Taco Bell Quesadilla Sauce:
2 teaspoons Minced Pickled Jalapenos
1/4 c. Mayo
2/3 teaspoon Sugar
2 teaspoons Pickled Jalapeno Juice
1/8 teaspoon Cayenne Pepper
1/2 teaspoon Paprika
1/8 teaspoon Garlic Powder
1 Dash Salt
1/2 teaspoon Cumin
Taco Bell Quesadilla:
1 Slice American Cheese
1 c. Cheddar & Monterey Jack Cheese (use 1/2 cup of each)
2 Flour Tortillas (Burrito size)
1 Chicken Breast
HOW TO MAKE COPYCAT TACO BELL QUESADILLA
Taco Bell Quesadilla Sauce:
Step 1: To a small bowl, add the sauce ingredients and mix well until everything is blended. Set aside.
Taco Bell Quesadilla:
Step 2: Sprinkle the chicken breast with salt and pepper on all sides.
Step 3: In a skillet, heat 1 1/2 tbsp oil over medium-high heat. Once the oil is hot, add the seasoned chicken breast to the skillet and cook until the internal temperature of the thickest part of the meat reached 165 degrees F. When done, take the chicken breast off the skillet and slice thinly.
Step 4: On a hot skillet, lay the tortilla. Place 1/4 cup of the shredded cheese and a half slice of American cheese on one side of the tortilla. Over the cheese, place the chicken.
Step 5: Spread about 1 1/2 tbsp sauce on the other side. Now, fold the tortilla and gently press using a spatula. Cook the quesadilla for about 2 to 4 minutes per side until the cheese has melted and bubbly.
Step 6: Remove from the skillet when done and slice the quesadilla into 4 pieces using a pizza cutter. Enjoy!
